Homemade Custard Ice Cream

Homemade custard ice cream is a summer must, and this recipe is made with feel-good ingredients for a rich, creamy sweet treat that doesn’t use any sugar!

Ingredients you’ll need:

  • whole milk
  • heavy cream
  • egg yolks
  • milk powder
  • vanilla extract
  • maple syrup
  • Manuka honey, or regular honey

When store properly, homemade ice cream typically lasts 2-3 months. It’s best to store the homemade ice cream in airtight, freezer-safe containers to help maintain its quality and freshness.

Homemade Custard Ice Cream

Ingredients

  • 3 cups Whole Milk
  • 3 cups Heavy Cream
  • ¾ cup Milk Powder
  • 1 cup Maple Syrup
  • ¼ cup Manuka Honey or regular honey
  • 6 large Egg Yolks
  • 1 tbsp. Vanilla Extract

Instructions

  • In a large saucepan, combine the whole milk, heavy cream, milk powder, maple syrup, and honey.
  • Whisk all ingredients together, then place over medium high heat to cook until 110F. Immediately remove from heat.
  • Add the egg yolks into a large bowl, then add ¼ cup of the hot milk mixture and immediately whisk. Continue this process two more times to gradually temper the eggs.
  • Pour the tempered eggs mixture back into the saucepan.
  • Place back over medium heat and stir until 170F to 175F, about 5-10 minutes. It should have slightly thickened up and easily coats the back of a spoon.
  • Remove from heat to stir in the vanilla. Pour into a heat-safe glass container, then let cool at room temperature for 15-20 minutes.
  • Store in the fridge until completely cooled, 2 hours to overnight.
  • Add to your ice cream maker and following appliance instructions.
  • While in soft serve texture, stir in the lightly crushed chocolate chunk cookies and toasted coconut.
  • Place in a freezer-safe container to freeze 1-2 hours to firm up. Enjoy!

  3. I made the ice cream base and it came out really thick idk if this is normal😭 it’s in the fridge to cool down

    1. Hi Shaikha! Because it’s a custard ice cream, the base is a bit thicker – this is what makes it super creamy!

    1. If you don’t have an ice cream kitchen aid attachment. What can I do still make the recipe?
    2. What dry milk do you use?

    1. Hi Tarrina! You can use any ice cream maker, sometimes home goods or tjmaxx will have great deals on them this time of year. And I use Milkman Milk Powder!

    1. hi Lisa!! the milk powder helps to create a really creamy texture, but can be omitted or subbed by 3 tablespoons of cornstarch

    wow insane. This is so so so good and I love that maple syrup is used as the sweetener. I made a rum raisin variation and it was so much better than anything ive bought at the store. it stayed the perfect consistency the whole time it was in the freezer.
