Italian Sausage Croissant Breakfast Bake
This Savory Croissant Breakfast Bake with Italian Sausage is a super easy, make ahead breakfast casserole that uses less than 10 ingredients and is perfect for feeding a crowd!

Ingredients you’ll need:
- Croissants cut into bite-sized pieces
- Browned Italian Sausage
- Olive Oil
- large Eggs
- Whole Milk
- Salt Black Pepper, Garlic Powder, & Onion Powder
- Fresh Rosemary chopped
- Mozzarella or Cheddar grated
- Chives for garnishing



Other Croissant Bake Additions:
- Sautéed veggies
- Deli Ham & Provolone Cheese (like a deconstructed ham & cheese croissant bake!)
- Fresh Sage (sautéed with the sausage)
- Cooked Bacon, chopped
- Broccoli (sautéed) and Cheddar Cheese


How to Make Ahead a Croissant Bake:
You can prep this in advance without baking it until the next morning by covering with plastic wrap and storing in the fridge up to 1 day in advance!

Italian Sausage Croissant Breakfast Bake
Ingredients
- 4-5 Croissants cut into bite-sized pieces
- 1 lb. Italian Sausage
- 2 tbsp. Olive Oil
- 8-10 large Eggs
- 1 cup Whole Milk
- 1 tsp. EACH: Salt, Black Pepper, Garlic Powder, & Onion Powder
- 1 tbsp. Fresh Rosemary chopped
- 1/2 cup Mozzarella or Cheddar grated
- Chives for garnishing
Instructions
- Preheat oven to 350F. Butter a 9×13″ baking dish.
- In a skillet over medium high heat, brown the ground sausage in the olive oil, breaking up into tiny pieces with a wooden spatula.
- In a large bowl, whisk the eggs, milk, spices, and herbs together. Set aside.
- Add the sliced croissants, browned sausage, and grated cheese into the buttered dish. Pour the egg mixture on top and mix so it's all evenly distributed.
- Bake for 15-20 minutes, until all eggs are set in the center.
- Enjoy warm with fresh chives and hot honey!

This was delish! It took 40 min to bake. I did soak it all overnight in fridge.
