Spicy Tom Kha Soup (Coconut Ginger Soup)
This Spicy Tom Kha Soup is a creamy coconut-y and ginger flavored soup that is one of the coziest dishes inspired by Thailand! It’s delicious on it’s own or served with crispy shiitake mushrooms and noodles.

Ingredients you’ll need:
- shallots
- garlic
- fresh ginger
- lemongrass stalk
- gochujang, or red Thai chili paste
- soy sauce, or Tamari sauce
- rice wine vinegar
- broth (use bone broth for added protein and nutrients)
- lime juice
- coconut milk


What to Serve with Tom Kha Soup:
- Also known as Tom Kha Gai, slow simmer and shredded chicken is a phenomenal addition!
- Shiitake mushrooms sautéed until crispy in olive oil
- Cooked ramen noodles
- Cooked dumplings
- Crispy beef

Spicy Tom Kha Soup
Servings: 4
Ingredients
- 1 tbsp. Olive Oil
- 2 Shallots peeled and chopped
- 3-4 Garlic Cloves crushed
- 1" Fresh Ginger peeled and sliced
- 1 Lemongrass Stalk chopped
- 1 tbsp. Gochujang or red Thai chili paste
- 1 tbsp. Soy Sauce
- 1 tbsp. Rice Wine Vinegar
- 1-2 tsp. Chili Crisp Oil
- 4 cups Beef Broth or broth of choice
- Juice of 1 Lime
- 1 can Full Fat Coconut Milk
- Shiitake Mushrooms sautéed until crispy for serving
- Fresh Cilantro for serving
- Cooked Noodles for serving
Instructions
- Add the olive oil to a soup pot over medium high heat.
- Add the chopped shallots, garlic, ginger, and lemongrass. Sauté for 3-4 minutes, until fragrant.
- Reduce heat to medium to add the gochujang, soy sauce, and vinegar. Stir for 1 minute.
- Add the broth and lime juice. Stir to combine. Bring to a boil, then add the coconut milk and let simmer 10-15 minutes. Add chili crisp oil to taste.
- Remove the aromatics with a slotted spoon.
- Enjoy warm with crispy shiitake mushrooms, fresh cilantro, and noodles, if desired!
