BLT Sandwich with Candied Maple Bacon & Sourdough Bread

Take your lunch to the next level with this BLT Sandwich with Candied Maple Bacon & Sourdough Bread, a delicious twist on the classic bacon, lettuce, and tomato sandwich. Featuring crispy maple candied bacon, fresh tomatoes, crisp lettuce (or micro greens), and toasted sourdough bread, this easy BLT recipe is packed with sweet, smoky, and savory flavors in every bite.

What makes this BLT sandwich different from a classic BLT?

This version features crispy candied maple bacon and toasted sourdough bread, adding a delicious balance of sweet, smoky, and tangy flavors while giving the sandwich extra texture and richness.

What type of bread works best for a BLT?

Sourdough bread is an excellent choice because it’s sturdy enough to hold the fillings without becoming soggy and adds a subtle tang that complements the bacon and tomatoes.

Can I make the candied maple bacon ahead of time?

Yes! Bake the bacon in advance and store it in an airtight container in the refrigerator for up to 4 days. Reheat it in the oven or air fryer for a few minutes to restore its crispness.

What are the best tomatoes for a BLT?

Ripe beefsteak, heirloom, or vine-ripened tomatoes are ideal because they’re juicy, flavorful, and thick enough to stand up to the bacon and bread.

How do I keep a BLT from getting soggy?

Toast the sourdough, pat the tomato slices dry, and spread mayonnaise on both slices of bread. The mayo helps create a barrier that slows moisture from soaking into the bread.

Can I add cheese to this BLT?

Absolutely! Sharp cheddar, provolone, Swiss, pepper jack, or creamy avocado pair beautifully with candied maple bacon.

What can I serve with a BLT sandwich?

BLTs pair well with potato chips, French fries, sweet potato fries, pasta salad, coleslaw, fresh fruit, pickle spears, or a cup of tomato soup.

Ingredients

for the candied bacon:

  • 1 lb high quality bacon
  • 3 tablespoons maple syrup
  • 3 tablespoons brown sugar
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cayenne

for the homemade mayo:

  • 1 large egg preferably room temp
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon fine sea salt
  • 3/4 cup extra virgin olive oil or neutral oil like avocado oil

for the sandwich:

  • 1 loaf sourdough sandwich bread loaf recipe here
  • 1 to 2 large heirloom tomatoes thinly sliced
  • microgreens or crisp lettuce
  • pickled onions or thinly sliced red onion

Instructions

to make the candied bacon:

  • Preheat oven to 350F. Line a rimmed baking pan with foil, then place a wire rack on top. Add the bacon strips in a single layer.
  • In a small bowl, combine the maple syrup, brown sugar, dijon, salt, black pepper, and cayenne. Mix very well. Brush on both sides of the bacon strips.
  • Bake on the middle oven rack for 25 to 35 minutes, depending on thickness, flipping the bacon halfway through. The bacon is done when deeply golden and crispy.

In the meantime, make the homemade mayo:

  • In a stainless steel bowl, combine the egg, lemon juice, dijon, and salt. Whisk vigorously for 1 minute, until thickened and creamy.
  • Add the olive oil one tablespoon at a time, whisking vigorously after each time so it stays thick and silky. After you’ve added at least 1/3 cup olive oil, you can pour the remainder in a gradual, thin stream as you whisk. Whisk an additional 1 minute.

To assemble the sandwich:

  • Slice the sourdough bread into 1/4″ or thicker slices. Place under the broiler for 1 to 2 minutes to toast, or add to a toaster.
  • Add a generous slather of the homemade mayo on the inside slices of both pieces of bread. Layer with the micro greens or crisp lettuce, followed by candied bacon, sliced heirloom tomatoes (seasoned with black pepper and salt), and pickled onions.
