kohlrabi Veggie Fritters

These crispy kohlrabi veggie fritters are a delicious way to turn humble vegetables into a golden, savory treat. Packed with fresh flavor and perfect for dipping, they make a satisfying snack, side, or light meal.

Ingredients you’ll need:

  • white onion
  • kholrabi
  • carrots
  • all purpose flour
  • seasonings
  • eggs
  • warm water
  • sour cream, for serving
  • soy sauce, for serving

How to Store and Reheat Veggie Fritters:

Store veggie fritters in an airtight container in the refrigerator for up to 4 days. To reheat, warm them in a skillet or oven at 400°F until crispy, or use an air fryer for extra crunch.

Ingredients

  • 1 White Onion
  • 1 large Kholrabi
  • 2-3 Carrots
  • 1 1/2 cups All Purpose Flour
  • 1/2 tsp. EACH: Baking Powder, Turmeric, Paprika, Garlic Powder, Onion Powder, Salt
  • 2 large Eggs
  • 1 cup Warm Water
  • Sour Cream for serving
  • Olive Oil for frying

Instructions

  • Add enough olive oil to large saucepan so it's 2-3" deep. Heat up to 400F, or until the oil is glistening.
  • Thinly sliced the carrot, white onion, and kohlrabi into toothpick-sized strips. The thinner, the crispier the fritters will be.
  • In a large bowl, beat the eggs until smooth. Add the warm water and seasonings. Mix well.
  • Add the flour and mix until a thick but slightly runny batter. Add more warm water, as needed.
  • Add the veggies into the batter and toss until very well combined.
  • Working with your hands, add about 1/3 cup veggie batter into the frying oil. Add 1-2 more fritters, if space allows.
  • Fry until golden brown on both sides, about 3-4 minutes.
  • Remove with tongs or a slotted spoon to a paper towel lined plate to drain excess oils.
  • Enjoy warm with your favorite dipping sauce or sour cream!

  1. I tried this because I didn’t have potatoes and wanted to make hashbrowns for my egg wrap. I decided to make this and add it into the wrap and it was AMAZING! I love all of Lauren’s recipes but this one was gamechanger!
