What does lemongrass taste like?
Lemongrass has a bright, citrusy flavor with subtle hints of ginger and mint. Its taste is fresh and slightly sweet, adding a fragrant, zesty note to both savory and sweet dishes.


How to Store and Reheat Creamy Chicken:
Store creamy chicken in an airtight container in the refrigerator for up to 3–4 days. To reheat, gently warm it on the stovetop over low heat or in the microwave, adding a splash of broth or coconut milk to maintain the creamy texture.

Creamy Coconut Lemongrass Chicken
Ingredients
- 2 Chicken Breasts about 1 – 1.5 lbs
- 2 tbsp. Olive Oil
- 2 tbsp. Brown Sugar
- 1 tsp. Salt
- 1 tsp. Black Pepper
- 2 Shallots finely chopped
- 1/3 cup Dry White Wine
- 2 Garlic Cloves minced
- 2 Lemongrass Stalks sliced into long strips
- 1 can Full Fat Coconut Milk
- Juice of 1-2 Limes
- 1 tsp. Red Pepper Flakes
- Fresh Cilantro for garnishing
- Scallions for garnishing
Instructions
- In a large skillet over medium high heat, add the olive oil.
- Slice the chicken breasts in half lengthwise. Season all sides with the salt, black pepper, and brown sugar.
- Sear the chicken for 2-3 minutes, then flip to sear another 3-4 minutes.
- Add the white wine to deglaze the pan, then add the garlic, shallot, and lemongrass to saute for 4-5 minutes.
- Stir in the coconut milk, lime juice, and red pepper flakes.
- Reduce heat to LOW, then add the chicken and cover to simmer for 10-15 minutes.
- Garnish with freshly chopped cilantro and scallions.

I am so excited to have stumbled on Lauren’s blog! I’ve committed to making one of her recipes once a week and this was the first one I tried.
Delicious meld of flavors that leans towards Thai foods. I cooked some rice to serve with it. We like a little more spice so next time I make it I might add some garlic chili paste, but this quick and delicious recipe is now jointing the rotation of our frequent meals!
I tried making this, but I think there must be an ingredient or step missing because it didn’t turn out how described.
