What is the difference between dumplings and potstickers?

The main difference between potstickers and dumplings comes down to their preparation and cooking method:

  1. Cooking Method:
    • Potstickers are typically pan-fried, which gives them a crispy bottom, then steamed to cook through. This method is what gives them their signature texture—crisp on the bottom but soft and juicy on top.
    • Dumplings, on the other hand, can be boiled, steamed, or fried. Boiled dumplings are soft all over, while steamed dumplings have a tender, chewy texture.
  2. Shape and Wrappers:
    • Potstickers tend to have a slightly thicker wrapper and are usually shaped with pleats along one side to help seal them.
    • Dumplings can come in many forms and shapes, often with simpler, rounder wrappers, and are more versatile in their fillings and cooking styles.
  3. Crispiness:
    • Potstickers have that signature crispy bottom, thanks to the pan-frying step.
    • Dumplings, when boiled or steamed, are soft all over without any crispy texture.

So, potstickers are a specific type of dumpling, but not all dumplings are potstickers! 

How to Make Homemade Dumpling Wrappers:

Homemade Dumpling Wrappers are only 3 ingredients: flour, salt, and olive oil. Oh, and hot water – but does that even count? Lol!

The basic process of making dumpling wrappers in combining those ingredients in a bowl until a shaggy dough then turning out on a clean surface to knead until a smooth, pliable dough ball. You’ll cover it to rest 20-30 minutes to help the gluten relax.

Then roll out into individual dumpling wrappers!

How to Store and Reheat Potstickers?

After cooking, let the potstickers cool completely then store in an airtight container in the fridge up to 3-4 days. You can also freeze the potstickers for up to 2 months.

To reheat refrigerated potstickers, heat up a little oil in a skillet over medium heat. Place the potsticker in the pan and cook 2-3 minutes until the bottoms are crispy again. Add a splash of water and cover to steak for 3-5 minutes, until heated though.

Can you freeze potstickers?

es, you can absolutely freeze potstickers! Freezing them is a great way to store leftovers or prepare them in advance. Here’s how to do it:

  1. Arrange on a Baking Sheet: After you’ve assembled your potstickers, place them on a baking sheet in a single layer, making sure they don’t touch each other. This prevents them from sticking together as they freeze.
  2. Freeze Until Solid: Put the baking sheet in the freezer for about 1-2 hours, or until the potstickers are firm to the touch. This step helps them hold their shape.
  3. Store in a Bag or Container: Once frozen, transfer the potstickers to a freezer-safe bag or airtight container. You can store them in the freezer for up to 3 months.
  4. Cooking Frozen Potstickers: When you’re ready to cook them, there’s no need to thaw—just cook them straight from the freezer! Pan-fry as usual, adding a bit of extra time for them to cook through, or steam them directly from frozen.

Ingredients

For the Homemade Dumpling Wrappers:

  • 2 1/2 cups All Purpose Flour
  • 3/4 cup Hot Water
  • 2 tbsp. Olive Oil
  • 1 tsp. Salt

For the Filling:

  • 1 lb. Ground Beef or minced pork
  • 2 tbsp. Soy Sauce
  • 1 tbsp. Sesame Oil
  • 1 tbsp. Oyster Sauce
  • 1 tbsp. Granulated Cane Sugar
  • 1 tbsp. Fresh Ginger grated
  • 1 tbsp. Garlic minced, about 3 cloves
  • 1 tsp. Salt
  • 1 cup Vegetable Stock
  • 5 Spring Onions finely chopped

To Cook/Serve:

  • Olive Oil
  • Scallions
  • Chili Crisp Oil
  • Soy Sauce

Instructions

For the Homemade Dumpling Wrappers:

  • Combine the flour and salt in a large bowl. Mix well.
  • Add the olive oil and gradually pour in the hot water, mixing until a shaggy dough. Turn out the dough to a clean surface and knead until a smooth and pliable dough, about 2-3 minutes.
  • TIP: If the dough is too sticky, add a few tablespoons of flour. If the dough is too firm, add a few teaspoons of warm water.
  • Cover and let rest 20 minutes.

For the Filling:

  • Combine all ingredients except the vegetable stock in a large mix. Mix until very well combined.
  • Add half of the vegetable stock and mix until the beef has absorbed the liquid. Continue to gradually add the vegetable stock as you mix, until a loose but not runny mixture. Set aside.

To Assemble:

  • Divide the dumpling dough into two pieces. Roll out each piece into 1.5″ thick logs. Slice each log into 1″ pieces. Roll each piece in the palms of your hands to help shape into a ball.
  • Roll out into circular shapes on a very floured surface to 1/16″ thick, about the thickness of a penny.
  • Add one tablespoon of the filling in the center of each wrapper.
  • Fold up the two sides like a half moon shape. Make pleats along one edge of the wrapper. Pinch the very tops to seal together.

To Cook:

  • Add a generous drizzle of olive oil to a skillet over medium heat. Once heated for a minute, add a single layer of potstickers with 1″ space in-between. Cook until crispy and golden on bottom, about 3-4 minutes.
  • Add 1/3 cup water and immediately cover the skillet to steam for 5 minutes. Remove the cover to continue cooking until any remaining water has evaporated.
  • If needed, use a spatula to help remove any potstickers from the skillet.
  • Enjoy warm with chopped scallions, soy sauce, and chili crisp oil.

    I was excited about these but after I tried was completely disappointed, the ginger and soy sauce taste was very overwhelming, also, they were too salty
    and they were a lot of work too put together and to cook them
    I personally will not make these again, very disappointed.
