Balsamic Roasted Onions
These Balsamic Roasted Onions are a simple yet flavorful side dish recipe made by roasting onions in a rich balsamic glaze. Perfect for holiday dinners, weeknight meals, and roasted vegetable sides, this easy oven-roasted onion recipe adds sweet and savory depth to any meal.

Ingredients you’ll need:
- Small Sweet Onions
- Olive Oil
- Fine Sea Salt
- Traditional Balsamic Vinegar
- Brown Sugar
- Honey
- Fresh Thyme, to garnish

What type of onions work best for balsamic roasted onions?
Yellow onions are the most common choice because they caramelize well, but red onions add extra sweetness and color. Sweet onions also work beautifully.
How do I keep the onions from burning?
Roast at 400°F (205°C) and toss the onions halfway through cooking. If the balsamic starts to darken too quickly, loosely cover with foil for the final minutes.
Should I add balsamic vinegar before or after roasting?
Add it before roasting so it reduces and caramelizes in the oven. For extra shine and flavor, you can drizzle a little more after roasting.
Can I make balsamic roasted onions ahead of time?
Yes. Roast them up to 2 days ahead, store in the refrigerator, and reheat in the oven or on the stovetop before serving.
