Chocolate Lava Cakes with Strawberry Swirl Custard Ice Cream

Why didn’t my lava cake have a molten center?
Sadly, my friend, it was overbaked. Even 1–2 extra minutes can turn lava into fully set cake.
That’s why you want to pull them out of the oven when the edges are firm but the center still looks soft and slightly jiggly. It’s better to be underbaked then over, and you can always pop back in the oven for another minutes if needed.
Why did my cake collapse or fall apart?
That usually means:
- Too little flour, or
- You unmolded it too hot
Let it rest 1–2 minutes after baking so it sets just enough to hold shape.
What chocolate works best?
Use good-quality dark or semi-sweet chocolate (60–70% cacao).
Chocolate chips can work, but bars melt smoother and taste richer.



Can I make lava cakes ahead of time?
Yes! Prepare the batter, fill the ramekins, and refrigerate up to 24 hours.
Bake straight from the fridge—just add 1 extra minute.
Why did my lava leak out before serving?
That’s usually from:
- Buttering the ramekins poorly, or
- Too little flour
Grease well and dust with cocoa powder for extra insurance.
How do I know when they’re done?
Look for:
- Set edges
- Soft, slightly puffed center
- Top looks matte, not wet
If the center jiggles like pudding, you’re right on track.
Can I use a muffin tin instead of ramekins?
Yes, but:
- Grease very well
- Reduce baking time by 1–2 minutes
- Serve carefully—they’re more fragile!

Chocolate Lava Cakes with Strawberry Swirl Custard Ice Cream
Ingredients
For the Strawberry Swirl Custard Ice Cream:
- 1 batch Custard Ice Cream Base recipe here, prepped the night before
- 2 cups Frozen Strawberries
- 1/4 cup Water
- 3 tbsp. Granulated Cane Sugar
For the Chocolate Lava Cakes:
- 1/2 cup Powdered Sugar
- 1/3 cup All Purpose Flour
- 1/4 tsp. Fine Sea Salt
- 6 oz Semisweet Chocolate chopped
- 1/2 cup Unsalted Butter
- 1/2 tsp. Vanilla Bean Paste
- 2 large Eggs
- 2 Egg Yolks
Instructions
To Make the Strawberry Swirl Custard Ice Cream:
- Prep the custard ice cream base the night before using this recipe. Place the ice cream maker base in the freezer, as well.
- In a saucepan over medium high heat, add the water, frozen strawberries, and sugar. Mix to combine, bring the water to a boil, then cover to simmer for 10-15 minutes, until strawberries are tender and beginning to thicken into a syrup.
- Once cooled to room temperature, blend until smooth.
- Add the custard ice cream to your ice cream maker to churn until soft serve texture.
- Transfer to an airtight, freezer-safe container. Spoon the strawberry sauce over the ice cream and lightly swirl together with a spoon or knife.
- Cover with a lid to freeze for 2-3 hours, until firmer ice cream texture.
To Make the Chocolate Lava Cakes:
- Preheat the oven to 425F.
- Spray either 4 (6-oz) ramekins, or a 6 muffin tins with olive oil spray. Place over the sink to dust all sides with cocoa powder. Set aside.
- In a small bowl, combine the flour, powdered sugar, and salt. Mix well. Set aside.
- In a saucepan over medium heat, add the butter to melt. Reduce heat to LOW then add the chopped chocolate. Stir until smooth. Set aside.
- In a large bowl, combine the eggs and egg yolks. Whisk vigorously for 1 minute.
- Add the chocolate mixture and vanilla bean paste. Beat again for 30 seconds.
- Add the flour mix and mix just until smooth.
- Pour evenly into the prepared ramekins.
- Bake for 11-13 minutes, until edges are firm and the centers are set on top but still jiggly and underbaked.
- Let cool 1-2 minutes in the ramekins, before turning upside down onto a plate.
- Enjoy warm with the strawberry swirl ice cream!
