Fig Leaf Vanilla Bean Cheesecake with Strawberry Sauce
This Fig Leaf Vanilla Bean Cheesecake is a creamy, elegant homemade dessert infused with the delicate, floral flavor of fresh fig leaves and fragrant vanilla bean, then topped with a vibrant homemade strawberry sauce. Perfect for summer gatherings, special occasions, or an unforgettable dinner party dessert, this unique cheesecake recipe is as beautiful as it is delicious.

What does fig leaf taste like?
Fig leaves have a delicate flavor that can be described as subtly sweet, nutty, and floral, with hints of coconut and vanilla. They add a unique depth to desserts without making the cheesecake taste strongly like figs.
Can I make this cheesecake without fig leaves?
Yes. If fig leaves aren’t available, you can make a classic vanilla bean cheesecake instead. The fig leaf infusion is what gives this recipe its distinctive flavor, but the cheesecake will still be delicious without it.
Where can I find fresh fig leaves?
Fresh fig leaves can often be found on fig trees during the growing season. If you don’t have access to a fig tree, check local farmers markets, specialty produce shops, or a garden center that sells edible fig varieties.

Do I need to use fresh vanilla beans?
Fresh vanilla beans provide beautiful flavor and those signature vanilla bean specks, but you can substitute pure vanilla extract or vanilla bean paste if needed.
How do I prevent cheesecake from cracking?
Avoid overmixing the batter once the eggs have been added, and don’t overbake the cheesecake. Allowing the cheesecake to cool gradually can also help prevent cracks from forming.
Does this cheesecake need a water bath?
A water bath isn’t always required, but it can help the cheesecake bake more evenly and maintain a smooth, creamy texture. If you prefer not to use one, you can bake the cheesecake at a lower temperature and avoid opening the oven door frequently.

How long does cheesecake need to chill?
For the best texture, refrigerate the cheesecake for at least 4–6 hours before slicing. Chilling it overnight is even better if you are making it ahead for a special occasion.
Can I make the strawberry sauce ahead of time?
Absolutely. Homemade strawberry sauce can be prepared ahead of time and refrigerated until you’re ready to serve the cheesecake. Let it cool completely before storing it in an airtight container.
Can I use frozen strawberries for the sauce?
Yes. Frozen strawberries are a convenient substitute for fresh strawberries and work particularly well when strawberries are out of season. You may need to cook the sauce slightly longer to reach the desired consistency.

How should I store leftover cheesecake?
Store leftover cheesecake covered in the refrigerator for up to several days. Keep the strawberry sauce refrigerated separately if possible so the cheesecake crust and filling maintain their best texture.
Can I freeze this cheesecake?
Yes. For the best results, freeze the cheesecake without the strawberry sauce. Wrap individual slices or the whole cheesecake tightly, freeze until firm, and thaw overnight in the refrigerator before serving.
What can I serve with fig leaf vanilla bean cheesecake?
The cheesecake is delicious with strawberry sauce, fresh berries, whipped cream, or a light dusting of powdered sugar. A few fresh fig slices can also make a beautiful garnish when figs are in season.

Fig Leaf Vanilla Bean Cheesecake with Strawberry Sauce
Ingredients
For the Crust:
- 9 to 10 graham cracker sheets 1 package
- 7 tablespoons unsalted butter melted
For the Filling:
- 6 to 8 fig leaves fresh and green
- 1 cup whole milk room temp
- 4 8 oz packages cream cheese, room temp
- 1 ¼ cup granulated sugar
- 4 large eggs room temp
- ½ cup sour cream room temp
- 1/3 cup all purpose flour shifted
- 1 tablespoon vanilla extract
- 1 teaspoon vanilla bean paste
For the Strawberry Sauce:
- 1 pound fresh strawberries tops trimmed and quartered
- 1/3 cup granulated sugar
- 1 tablespoon fresh lemon juice
Instructions
- Preheat oven to 325F. Butter a 9” springform pan and set aside.
- Place the fig leaves on a parchment line baking pan to toast for 8 to 10 minutes, until dried out and curled. They should stay a green color and not be brown!
- Add the milk to a saucepan over medium low heat. Add the fig leaves and let steep until small bubbles form at the end, about 2 to 3 minutes. But do not boil the milk at any point! Stir the fig leaves once softened so they are fully submerged in the milk. Remove from heat and cover with foil to steep an additional 30 minutes. The longer it sits, the better the flavor, so overnight is best!
- In a food processor, add the graham crackers to pulse until very fine crumbs. Add the melted butter and pulse until well combined. Transfer to the prepared springform pan and pat into an even bottom layer.
- Bake the crust for 10 minutes, until a deepened browned color. Remove to rest at least 10 minutes and wrap the bottom tightly in foil before adding the filling.
- After you’ve cleaned and dried the food processor, add the cream cheese and sugar. Blend until mostly smooth. Scrape down the sides and pulse once more.
- Remove the fig leaves from the milk and add to the food processor. It’s okay if the milk has reduced! Blend on LOW until smooth.
- Add the eggs one at a time.
- Add the sour cream, shifted flour, vanilla extract, and vanilla bean paste. Blend until very smooth. Be careful not to over blend at this point as that will add air into the cheesecake and cause it to split when baking.
- Place the foil wrapped springform pan in a roasting pan or large skillet. Pour the cheesecake filling into the pan. Add hot water to the outside of the pan so it’s 1-inch deep.
- Carefully transfer into a lower rack of the oven to bake 55 to 60 minutes, until the edges are set but center is jiggly when shaken (think jello jiggly!)
- Turn OFF the oven heat but leave the cheesecake inside. Crack the door to cool for 30 minutes inside the oven then remove from the oven to cool at room temperature for 2 hours.
- Cover the top with foil or reusable wrap to chill in the fridge at least 4 hours to overnight.
- To make the strawberry sauce, combine the quartered strawberries, sugar, and lemon juice. Place over medium heat and stir until strawberries have released their juices and bubbling. Reduce heat to LOW and simmer 15 to 20 minutes, stirring occasionally to prevent any burning. Once thickened, let cool to room temperature.
- Set out the cheesecake for at least 20 minutes at room temperature before enjoying with the strawberry sauce.
