Limoncello Raspberry Sponge Cake

- Sift the Dry Ingredients: Sift your flour, baking powder, and any dry ingredients together. This ensures there are no lumps and helps to create a light, airy texture.
- Whip the Eggs Well: The key to a fluffy sponge cake is well-beaten eggs. Beat them until they double in volume, get light in color, and form soft peaks. This adds air, which is crucial for a light, spongy texture.
- Fold Gently: When combining wet and dry ingredients, gently fold the flour into the beaten eggs to avoid deflating the batter. Over-mixing can make the cake dense.
- Use the Right Pan: Always use an ungreased, straight-sided pan for sponge cakes. The batter needs to cling to the sides of the pan as it rises, so it has enough support to lift while baking.
- Don’t Over-Bake: Keep an eye on your sponge cake while it’s in the oven. Over-baking can result in a dry texture. It’s done when a toothpick inserted into the center comes out clean.
- Cool the Cake Upside Down: To prevent the sponge from collapsing, let it cool upside down. You can place it on a wire rack with a bottle or a jar to keep the cake suspended.
- Brush with Syrup: For added moisture and flavor, brush your sponge cake layers with a flavored syrup like limoncello or fruit juice before assembling.

How to Store Cake Properly:
Storing a frosted sponge cake properly is crucial to keep both the cake and frosting fresh without losing its flavor or texture. Here’s the best way to store your frosted sponge cake:
1. Refrigeration (for Frosted Cakes with Buttercream, Whipped Cream, or Cream Cheese Frosting):
- Cover the Cake: If you’ve already frosted the cake, cover it loosely with plastic wrap, or place it in an airtight cake container. A cake dome is a great option too since it keeps the cake safe from external odors and helps maintain the frosting’s shape.
- Keep It Cool: Store the frosted cake in the fridge, especially if the frosting contains perishable ingredients (like cream cheese, whipped cream, or fresh fruit). This will prevent the frosting from melting and keep the cake fresh.
- Avoid Plastic Wrap Directly on Frosting: If you must wrap the cake, use parchment paper or wax paper on the frosting to prevent it from sticking to the plastic wrap.
2. Room Temperature (For Short-Term Storage, 1-2 Days):
- Use a Cake Dome: If you plan to eat the cake within a day or two, you can store it at room temperature. Use a cake dome or an airtight container to keep it safe from air and dust.
- Ideal Temperature: Keep it in a cool, dry place, away from heat and humidity. If your home tends to be warm, refrigerating the cake is the safer option.

Limoncello Raspberry Sponge Cake
Ingredients
For the Lemon Raspberry Sponge Cake:
- 8 large Eggs separated
- 1 cup Granulated Cane Sugar
- Zest & Juice of 1 Lemon
- 1/4 cup Whole Milk
- 1/4 cup Melted Butter
- 1/4 cup Sour Cream
- 1 tsp. Vanilla Bean Pastę
- 1 1/2 cups Fresh Raspberries halved
- 1 1/2 cups All Purpose Flour
- 2 tsp. Baking Powder
- 1/4 tsp. Fine Baking Salt
For the Limoncello Syrup:
- 1/2 cup Limoncello
- 1/4 cup Granulated Cane Sugar
For the Vanilla Buttercream:
- 1 cup Softened Unsalted Butter
- 1/3 cup Heavy Cream
- 3-4 cups Powdered Sugar
- 2 tsp. Vanilla Bean Paste
For Decorating:
- 12 oz. Fresh Raspberries
- 3/4 cup Raspberry Jam and/or Lemon Curd
Instructions
For the Lemon Raspberry Sponge Cake:
- Preheat oven to 350F. Butter two 8″ cake pans and line the bottoms with parchment paper.
- In a large bowl, combine the lemon zest and sugar. Mix with your fingers to help release the lemon essence. Remove half of the sugar to a smaller bowl.
- Separate the eggs by adding the egg whites to the bowl of a stand mixer fitted with the whisk attachment. Add the yolks to the larger bowl of (half) lemon-sugar.
- Whip the egg whites until soft peaks, then gradually add the remaining lemon-sugar in the smaller bowl. Beat until stiff peaks. Set aside.
- In the egg yolks bowl, whisk vigorously for 1 minute, until pale and fluffy. Add the milk, vanilla, 2 tablespoons lemon juice, sour cream, and melted butter. Whisk very well.
- Add the flour, baking powder, and salt to the egg yolks mixture. Beat for 1 minute, until smooth.
- Using a spatula, gently fold the flour-egg yolks mixture into the whipped egg whites. Try to keep the egg whites fluffy and firm.
- Once halfway incorporated, add the chopped raspberries. Fold just until incorporated.
- Divide the batter between the prepared cake pans.
- Bake for 20-25 minutes, until golden on top and a toothpick inserted into the centers comes out clean. The centers should also be firm to the touch and not jiggly.
- Let cool in the pan for 15 minutes then transfer to a wire rack to cool completely.
For the Limoncello Syrup:
- Combine the limoncello and sugar in a saucepan over medium high heat. Stir until the sugar dissolves, about 5-6 minutes. Set aside to cool completely.
For the Vanilla Bean Buttercream:
- In the bowl of a stand mixer fitted with the whisk attachment, beat the softened butter until smooth.
- Add two cups of the powdered sugar and beat until incorporated. Add the heavy cream and beat another 2 minutes.
- Add another cup of powdered sugar and beat 2-3 minutes. If desired, add the remaining cup of powdered sugar and beat 4-5 minutes, until a light and fluffy buttercream. Even if not adding the last cup of powdered sugar, beat for 4-5 minutes at the end.
- Add the vanilla bean paste and beat for 30 seconds.
To Decorate/Assemble:
- Slice the completely cooled cakes in half lengthwise.
- Add a little frosting to the bottom of the cake plate, then the first cake layer. Brush the cake layer with 1/4th of the limoncello syrup. Add 1/3-1/2 cup buttercream and spread out evenly. Add a thin layer of)about 3-4 tablespoons) of raspberry jam or lemon curd. Repeat with remaining cake layers. Frost the outside of the cake with the remaining buttercream. Decorate the top of the cake with fresh raspberries to serve!

hi Julia! that’s so sweet of you!! so you could replace the limoncello with a simple lemon syrup such as: 1 cup granulated cane sugar, 1/2 cup water, 1/3 cup fresh lemon juice, and lemon zest. bring it to a boil, then simmer for 5-10 minutes, until slightly thickened.
