Meal Prep Week 4: Tahini Butter Roasted Chicken & Coconut Rice
Meal Prep Week 4 is here with easy, flavor-packed recipes like tahini butter roasted chicken, coconut rice, maple chocolate cereal bars, sourdough discard wild blueberry streusel muffins, and a nourishing glass skin tea. This weekly meal prep guide helps you save time, eat well, and stay consistent with healthy, budget-friendly meals all week long.

These Sourdough Discard Wild Blueberry Chocolate Chip Streusel Muffins are the BEST muffins ever!!! They stay soft for days and can easily be reheated to crisper up the streusel in the oven at 400F for 5 minutes.

How to Store Muffins?
- For 1-2 days, keep in an airtight container at room temperature. Line the container with a paper towel (top and bottom) to help absorb moisture.
- For up to 5 days, wrap each muffin individually in parchment paper then Saran Wrap. You could at this point store in the refrigerator to extend life, just reheat in the microwave for 10-15 seconds or oven at 400F for 3-5 minutes.
- For up to 2-3 months, let muffins cool completely before wrapping individual in plastic wrap or foil then store in a freezer bag. Keep in the freezer. When ready to eat, let thaw at room temperature or microwave for 30-45 seconds.


This “Glass Skin” Tea is amazing for boosting collagen and promoting radiant skin! It can be prepped and store for up to 5 days, where the flavor will continue to develop and become sweeter naturally. You can enjoy it either cold (like sweet tea – but add a little honey!) or warm!
Jujube (red dates)
- High in vitamin C → supports collagen production for firmer, smoother skin
- Helps improve sleep and reduce stress → better overnight skin repair
- Contains antioxidants that protect against dullness and early aging
Goji berries
- Packed with antioxidants → fight free radical damage linked to wrinkles and uneven tone

Ginger

- Promotes overall wellness (sleep, digestion, inflammation) → shows up as healthier-looking skin



Making a seasoned butter to rub on the chicken prior to roasting is one of the ULTIMATE methods to making juicy chicken with the most flavorful exterior!!
Locks in moisture
- Butter melts into the chicken as it roasts, helping keep the meat juicy and preventing it from drying out
Builds deeper flavor
- Seasonings mixed into the butter (garlic, herbs, spices) coat the chicken evenly, so every bite is well-seasoned—not just the surface
Crispier, golden skin
- The fat in butter promotes browning, giving you that rich, crispy, golden finish
Better seasoning penetration
- Rubbing seasoned butter under and over the skin lets flavor seep into the meat as it cooks
Even cooking
- Fat helps conduct heat more evenly, reducing the chance of dry spots


How to reheat chicken and rice?
Microwave (fast + easy)
- Add 1–2 tbsp water or broth over the rice
- Cover with a microwave-safe lid or damp paper towel
- Heat in 60–90 second intervals, stirring halfway
- Let it sit 1 minute before eating (helps redistribute moisture)
- Best everyday method
Stovetop (best texture)
- Add a splash of water, broth, or a little oil to a pan
- Add rice first, then chicken on top
- Cover and heat on medium-low, stirring occasionally
- Great for keeping chicken tender and rice fluffy
Oven (for larger portions)
- Preheat to 300–325°F
- Place in an oven-safe dish
- Add a little liquid + cover with foil
- Heat for 10–20 minutes
- Best if you’re reheating multiple servings

Meal Prep Week 4: Tahini Butter Roasted Chicken & Coconut Rice
Ingredients
For Breakfast:
- 1 batch Sourdough Discard Wild Blueberry Streusel Muffins recipe here
For the “Glass Skin” Tea:
- 8 cups water
- 2 honey crisp apples sliced
- 1 cup jujube
- 1/3 cup goji berries
For the Cereal Bars:
- 6 oz. protein honey nut O’s
- 1/2 cup smooth almond butter
- 1/3 cup maple syrup
- 6 oz milk or dark chocolate melted with the coconut oil
- 2 tbsp. coconut oil
- flaky salt
For the Tahini Butter Chicken:
- 2 lbs. chicken thighs or pounded chicken breasts
- 5 tbsp softened unsalted butter
- 3 tbsp tahini or miso
- 2" ginger peeled and grated
- 2 garlic cloves grated
- 1 tsp rice vinegar
- 1 tsp. salt
- 1 tsp black pepper
- 1 tsp ground cumin
- 1 tsp dried parsley or cilantro
For the Coconut Milk:
- 1 cup jasmine or basmati rice
- 1 tbsp olive oil
- one 14-ounce can full-fat coconut milk
- 1 tbsp unsalted butter
- 1 tsp fine sea salt
- 1 bundle Broccolini
- Juice of 1/2 lemon

To Make the “Glass Skin” Tea:
- Combine all ingredients in a large pot over medium high heat. Bring to a boil then reduce to simmer 10 minutes. Remove from heat to cool before storing in glass containers. Stir in a honey to taste when warm enough to drink for a sweeter. This can be enjoyed cold like sweet tea or warm.
To Make the Cereal Bars:
- In a large bowl, mix the maple syrup and almond butter until smooth. Add the cereal and mix until well combined.
- Line a 8-9″ square casserole dish with parchment paper for easy removal. Add the cereal mixture then pat down with hand run under cold water.
- Spoon the melted chocolate evenly on top, then garnish with flaky sea salt. Place in the freezer for 30 minutes to 1 hour, until firm enough to slice into individual pieces. Store in an airtight container in the fridge for up to 5-7 days.
To Make the Tahini Butter Roasted Chicken:
- Preheat oven to 425F. Line a rimmed baking pan with parchment paper.
- In a bowl, combine the softened butter, tahini, grated ginger and garlic, rice vinegar, and spices. Mix until very well combined.
- Add the chicken to the prepared baking pan. Pat the top of each dry with a paper towel.
- Evenly distribute the seasoned butter mixture on top of each chicken piece. It helps to keep a bowl of water nearby to prevent the butter from sticking to your hands.
- Roast for 35-40 minutes, until deeply golden on top and juices run clear.
- Let rest at least 5 minutes before slicing with a chef’s knife into thin slices.
To Make the Coconut Rice:
- Heat the rice and oil in a medium saucepan over medium-high heat. Cook, stirring occasionally, until translucent, lightly golden, and fragrant, 2 to 3 minutes.
- Add 1/2 cup water first as it will be absorbed quickly.
- Stir in the coconut milk, salt, shredded coconut, sliced almonds and then bring to a boil. Reduce the heat to a simmer, cover, and cook until all the liquid is absorbed and the rice is cooked, about 20 minutes. Remove lid and with a fork. Stir in the butter.
- Cover and let steam for 5 to 10 minutes before serving.
(Optional) To Make the Roasted Broccolini:
- Add 1 tablespoon olive oil to a skillet over medium high heat. Add the broccolini to cook untouched for 2-3 minutes, then turn to cook an additional 1-3 minutes. The broccolini should be slightly charred and bright green. Finish with the juice of 1/2 lemon.
