Mexican Street Corn Jalapeño Poppers
We’re taking football season to the next level with these Mexican Street Corn Jalapeño Poppers on the grill!

Ingredients you’ll need:
- Jalapenos
- Cream Cheese
- Sour Cream
- Shredded Mexican Cheese, or Colby jack
- Corn Kernels
- Cotija Cheese
- Cooked Bacon
- Fresh Cilantro
- Garlic Cloves
- Lime juice
- Paprika
- Cayenne Pepper
- Salt & Black Pepper
- Fresh Chives



How to Make Jalapeño Poppers in Advance?
You can prep jalapeño poppers in advance up to the point of grilling/cooking them. It’s best to cook right before serving for optimal texture and flavor.

Mexican Street Corn Jalapeño Poppers
Servings: 8
Ingredients
- 12-14 large Jalapenos
- 8 oz Cream Cheese softened
- 4 oz Sour Cream
- 1 cup Shredded Mexican Cheese or Colby jack
- 1 cup Corn Kernels
- 1/2 cup Cotija Cheese
- 8 slices Cooked Bacon finely chopped
- 1/2 cup Fresh Cilantro chopped
- 2 Garlic Cloves minced
- Juice of 1 Lime
- 1 tsp. Paprika
- 1/2 tsp. Cayenne Pepper
- Salt & Black Pepper to taste
- Fresh Chives chopped, for garnishing
Instructions
- Preheat your Masterbuilt Gravity Series Charcoal Grill to 375F-400F.
- Slice the jalapenos in halved lengthwise, then use a spoon to remove the seeds inside.
- In a large bowl, combine the softened cream cheese, sour cream, shredded cheese, corn kernels, cotija cheese, chopped cilantro, minced garlic, lime juice, paprika, and cayenne pepper. Reserve the bacon!
- Mix until very well combined.
- Reserve 1/3 cup of the chopped bacon to garnish later, then add the bacon and mix until combined.
- Stuff the jalapeno halves with the filling.
- Add directly to the grill racks to cook for 8-10 minutes, until jalapenos are slightly charred on the bottom.
- Garnish with fresh chives and the reserved bacon to serve warm!
