Family-Style Italian Ciabatta Sandwiches
During the summer months, family-style sandwiches are an easy way to feed a crowd without the mess! It's satisfying, keeps you full for hours, and easy to pack without getting soggy.
Ingredients
Servings: 6-8
- 1 large Ciabatta Loaf
- ½ cup Basil
- ½ cup Mayo
- 4 oz. Soppressata, thinly sliced, or salami of choice
- 6-8 slices Provolone Cheese
- ½ - ¾ lb. Deli Turkey, thinly sliced
- ½ cup Pitted Olives, roughly chopped
- ½ cup Sliced Pepperoncici
- 2 cups Baby Arugula
- 2 tbsp. Olive Oil
- 1-2 tbsp. Apple Cider Vinegar
- Salt & Black Pepper to taste
- Parchment Paper, for wrapping
Instructions
- In a high-speed blender, combine the mayo and basil. Pulse until smooth, adding lemon juice to taste (optional).
- Slice the ciabatta loaf in half lengthwise.
- Slather the basil mayo on the bottom half followed by the sliced provolone, salami, turkey, olives, pepperoncini, and baby arugula.
- Drizzle the arugula with the olive oil, vinegar, and season with salt and black pepper to taste. Slice into individual sandwiches, wrap in parchment paper until ready to serve, and enjoy!
