How to Make Homemade Pasta

Making homemade pasta is one of my mom and I’s favorite activities to do together to unwind and catch up after a busy few weeks, so thought I’d take y’all through the basic process of making it from scratch … because every tomato girl summer needs to know the Italian basics

Ingredients you’ll need:

  • 00 flour
  • eggs
  • fine baking salt

What is 00 flour?

“00” Flour, also known as double zero flour, is a type of finely milled wheat traditionally used in Italian cuisine for making pasta and pizzas. The fineness, along with the flour’s natural protein content, provides incredible texture and flavor to traditional Italian dishes!

How to Store Homemade Pasta:

Homemade pasta can be stored in the fridge for 1-2 days, or dried for up to 3-4 months. It can also be frozen up to 8 months.

A key tip is to make sure your pasta dries separated from each other so that they don’t stick together. You also want to generously flour with additional 00 flour or semolina flour to prevent sticking.

Homemade Basil Pesto Recipe:

  • Β½ cup California Olive Ranch 100% California Extra Virgin Olive Oil
  • 2 cups basil leaves
  • 1/3 cup toasted pine nuts
  • ΒΎ cup grated parmesan
  • 2 garlic cloves, peeled and trimmed
  • Zest of 1 lemon
  • Β½ teaspoon fine sea salt
  • Β½ teaspoon cracked black pepper
  1. In a food processor, combine the basil, toasted pine nuts, grated parmesan, lemon zest, salt and black pepper. Pulse until finely broken up.Β 
  2. On LOW speed, gradually pour in the olive oil to emulsify. Scrape down the sides and blend for 30 more seconds.Β 
  3. Store in an airtight container of glass jar with lid in the fridge for up to 5 days.Β

Ingredients

  • 1 cup 00 Flour
  • 1 tsp. Fine Baking Salt
  • 2 large Eggs

Instructions

  • In a large bowl, combine the flour and salt. Mix well.
  • Add the eggs into the center and beat until smooth. Mix the beaten eggs and flour together until a shaggy dough, then turn out to a clean surface.
  • Knead until a soft and pliable dough, about 2-3 minutes. Add a few splashes of water as needed.
  • If time allows, cover and rest 10-30 minutes,
  • On a well-floured surface, roll out the dough to as thin as possible. Keep lifting up the dough and dusting with flour underneath to prevent any sticking.
  • Slice into strips of preferred thickness.
  • Cook for 1-2 minutes, until al dente.
  • Drain and toss in your favorite sauce to enjoy immediately!
